Roasted Vegetable and Prosciutto Tart

The inspiration for this recipe came from the Fall 2017 issue of Cook Fresh.  When I’m in the supermarket checkout line I’m always looking at the tabloid headlines with the latest movie star gossip and the women’s magazines that have pictures of gorgeous desserts and promises that you can lose 15 pounds in 15 days.  I’m always in the slowest moving lane at the grocery so I have plenty of time to read.  I spotted this Cook Fresh magazine on the very bottom of the rack and it was the only copy left.  The vegetable tart was on the cover so I picked it up and put it in my cart.  Sold.  I modified the recipe somewhat.  The real beauty of this is you can use any vegetables you have on hand or just add or omit based on personal preference.  These are the ingredients and quantities I used.

Ingredients for Filling:

2 cups of cubed butternut squash

1 cup of thin sliced leeks (white and light green parts only)

1 cup of course chopped sweet bell peppers

1 cup of course chopped cauliflower

3-4 cloves of garlic minced

1 T of fresh rosemary minced (I only had dried)

1 cup grape or cherry tomatoes halved

4 oz of prosciutto in bite sized pieces

2 T olive oil

salt and pepper to taste

10 oz goat cheese softened

grated asiago

1 egg

Ingredients for the Crust:

1 1/3 cups AP flour

6 oz of cold unsalted butter cubed

6 oz of cold cream cheese cubed

1 tsp kosher salt

2 T cold water

Preheat the oven to 375.  Combine all of the vegetables (except the tomatoes) and toss with the olive oil, rosemary, salt and pepper.

Spread the vegetables out in a baking dish, cover with foil, and bake for 30-40 minutes until the vegetables are tender.  Remove them from the oven and allow them to cool.

While the vegetables are cooking and cooling prepare your crust.  Preheat the oven to 400 once the vegetables are out.    Pulse the flour, salt, cream cheese and butter in the food processor until it starts to come together.

If necessary add a little cold water.  Put the dough on a generously floured service and knead.  Form the dough into a ball.

Roll the dough out into a 16 inch round.  Place the round on parchment paper and spread with the softened goat cheese.

Halve the tomatoes and dice the prosciutto.  Toss them with the vegetables.

Heap the vegetables and prosciutto on the goat cheese leaving about a two inch border.  Sprinkle with a little shredded asiago cheese.

Fold the edges of the dough over the edge of the filling.  Whisk together one egg and a tablespoon of water and brush the edges of the dough with the egg wash.

Bake for 35-45 minutes until the crust is golden brown.  Allow the tart to cool for 10 minutes before serving.

Slice and serve with a fresh fruit cup or salad.  We had ours with a side of applesauce.

NOTE:  I put the goat cheese in the microwave for a few seconds on the defrost setting so that it would spread on the crust more easily.

Any combination of vegetables equaling 5 cups is the perfect proportion (not including the tomatoes).  Brussel sprouts, carrots, golden beets, sweet potato, fennel, broccoli…any of those would work.  I used nearly triple the goat cheese called for in the original recipe and I thought that was perfect.  You can also change up the herbs and use basil, oregano or dill.

Vegetable and Bleu Cheese Tart

A few Christmases ago my daughter gave me a Nordic Bakery Cookbook by Miisa Mink.  It has some excellent recipes for  pastries and for savory dishes.  We all get tired of making the same meals over and over so tonight I got the book out and decided to make the Vegetable tart.  Just yesterday I bought some excellent buttermilk Bleu cheese at a local market that sells cheeses, meats, great olives, wine and craft beers.  The cheese was perfect for this dish.  Simple ingredients.  Nothing exotic.

Ingredients for the crust:

13 T butter at room temperature

3 1/2 T sour cream or crime fraiche

1 cup AP flour

1 tsp baking powder

pinch of salt

Cream the butter and the sour cream or creme fraiche together in a mixing bowl.

Mix dry ingredients in a separate bowl.  Stir into the creamed mixture until a dough forms.  Form dough into a ball, flatten into a disc, and wrap in plastic wrap.  Store in the refrigerator for at least 2 hours or overnight.

Roll out the dough on a lightly floured surface.

Transfer the pastry to a tart pan pressing it into the fluted edges of the pan and neatly cut off the excess pastry.  (I love my tart pan and I rarely use it.  You don’t see how pretty it is until it’s empty.)

Tart Ingredients:

1 1/2 cups broccoli florets

1 1/2 cups cauliflower florets

1 T vegetable oil

1 onion rough diced

1 cup cherry tomatoes halved

2 1/2 oz. Danish Bleu cheese (I used buttermilk Bleu)

3/4 cup grated Cheddar

fresh ground black pepper

The Bleu cheese is the star!

Preheat oven to 400.

Cut the florets into chunks.  Boil until they are tender crisp.  Drain well and allow to cool.

Heat the oil in a heavy skillet over medium heat.  Fry the onion until it is soft and golden.  Set aside to cool slightly.

Once the onion has cooled tip the pan over the pastry and spread the onion evenly.  Top with the broccoli, cauliflower and tomatoes.

Sprinkle the cheeses evenly over the top and sprinkle with cracked black pepper.

Bake for 25 minutes or until golden brown.

It’s beautiful!  And it tastes great!  Serve with a green salad and you have a perfect dinner.

NOTE:  You can substitute other vegetables taking care that they don’t become too watery when cooked.  Served as an appetizer the recipe serves 6; as an entree it serves 4.

 

 

Tomato and Cheese Tart

I have taken a bit of a hiatus from blogging. Not from cooking and baking. But from blogging. My father was visiting for a couple of weeks and I made a lot of very basic meals that he really likes. Potatoes in various forms, pork chops, baked ring bologna, fish, spaghetti and meatballs. And I didn’t blog those dishes. I also spent quite a bit of time recently in Michigan’s Upper Peninsula with my dad and cooking in his kitchen is quite challenging. No good chefs knives, an electric stove, and odds and ends of cookware…never exactly what you’re looking for.  You need to be cautious of expiration dates and the spice cabinet has salt, pepper, garlic, Lawrys, cinnamon sticks that should only be used for art projects, and a huge jar of mustard seed. Actually I SHOULD blog from his house because cooking there is more of a challenge but there is also no internet.   Now I’m back home and back to experimenting with recipes as well as blogging old favorites.   In a recent issue of one of my many cooking magazines I found a recipe for a Tomato, Bacon, and Gruyere Tart. I first made this as a savory breakfast dish for guests and later made it as a dinner dish with the help of a friend. Both times I modified the recipe. More modifications the second time. But both times it was absolutely yummy.   Both times I doubled the recipe and made two tarts.  The ingredients listed are for two tarts.

Ingredients:

2 thawed Puff Pastry sheets

1/2 pound bacon cooked crisp, drained and crumbled

2 cups shredded gruyere cheese

1 cup shredded asiago cheese

3 thin sliced heirloom tomatoes

1/2-1/4 cup diced onion

1/2 cup chopped baby portabella mushrooms

1/2 cup thin sliced fresh basil

salt and pepper to taste

1 egg beaten with 1 tsp of water for brushing the pastry

(The second time I made it I added the onions and mushrooms.)

Preheat your oven to 400.

Roll out the pastry sheets on a lightly floured surface into approximately a 10″x14″ rectangle and transfer to a backing sheet lined with parchment paper.

Shred the cheeses.

Leaving a couple inch border on each side sprinkle each sheet with half of the cheeses.   Top with the crumbled bacon, onion, and mushrooms.

Using a sharp knife or mandolin slice the tomatoes thinly. If you are using heirlooms alternate colors.

Fold the long sides over and cut small vents. Fold the short ends a little and pinch them together.   Brush with the egg wash.

Bake for 30 minutes until golden brown.   Enjoy every bite. We did!!

When I served this for breakfast we has toasted cinnamon bread and fresh fruit.

This recipe is only limited by your imagination. You can change up the cheeses and add other veggies like thin sliced summer squash, artichokes, spinach or kale. I think I’m going to make it with gruyere and blue cheese next time.

 

 

 

Galette aka Rustic Tart

Pie is one of my favorite desserts and this rustic tart (or galette) is easy and beautiful in its simplicity.  My good friend Jane introduced me to this recipe a couple years ago. She made hers with pears. It works with almost any kind of fruit filling….peaches, pears, apples, berries. Today I made it with pears and apples.  Awhile back my daughter and I made a galette with apples and raspberries. I keep my cornstarch and baking powder right next to each other in my baking cupboard and I somehow confused the two. We wondered why our fruit was bubbling. Was a fail that we fortunately were not serving to guests. But, we did eat it ourselves. Waste not, want not…or something like that.  Pay attention to the ingredients and I promise that you will enjoy this recipe.

Ingredients:

Pie crust (homemade or pillsbury refrigerated crust)

I prefer to make my own crust but in a pinch the refrigerated crust works fine.

5 cups of sliced fruit (I used 2 pears and 3 apples)

1/2 cup golden raisins or dried cherries or cranberries

1/2 cup amaretto

3 T cornstarch

3 T brown sugar

5 T white sugar

Preheat oven to 450

Peel, core and slice the apples. Core and slice the pears. Put them in a shallow dish with the raisins and amaretto and let them marinate for about 30 minutes. Longer is okay. While you’re waiting for the fruit,  prepare your pastry. Roll out a disc about the size of a pizza pan.

Line a baking pan with parchment paper. Once your fruit has marinated combine the brown sugar, corn starch, and 3 T of the white sugar. Drain the amaretto from the fruit. (Save it, it’s perfectly fine to sip on while you finish preparing the tart). Toss the fruit in the sugar mixture. Heap the fruit in the center of the prepared pastry.  Fold the edges over.  Sprinkle with 2 T of granulated sugar.

Bake at 450 for 20 minutes. Reduce oven temperature to 350 and bake for 45 minutes. Remove to a cooling rack.

Serve warm with a scoop of vanilla ice cream or at room temperature with a generous dollop of whipped cream.

Galette is a French word and means “any of various round flat pastries with a sugar glaze or a sweet filling such as fruit.”  If you want to impress people serve them a “galette”.  If you’re just serving it for dessert tonight call it a rustic tart.  Either way, enjoy!
